Preheat oven to 350 degrees Fahrenheit and spray a 9x13-inch baking dish with non-stick cooking spray.
Place 2 pounds pork roast in the prepared baking dish, fat cap side up. Using a knife, cut a criss-cross pattern into the top of the roast through the fat layer.
In a bowl mix the 4 tablespoons honey, 1 tablespoon chipotle puree, 1 teaspoon chopped cilantro, 1 teaspoon chili powder, 1 teaspoon cumin, ½ teaspoon chipotle hot sauce, ½ teaspoon salt, ¼ teaspoon black pepper, and 1 clove minced garlic.
Spread half of the chipotle mixture over the pork and bake for 40 minutes.
Cover the roast with the remaining chipotle sauce and bake for an additional 35-40 minutes until it reaches an internal temperature of at least 145 degrees Fahrenheit.
Remove from oven and let it rest for 5-10 minutes before slicing and serving.
