Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper or aluminum foil. Spray with nonstick cooking spray.
Lay 3 pounds sweet potatoes on the baking sheet and poke holes in the tops of them with a fork.
Bake for 60 minutes, rotating the pan halfway through to ensure even baking. Test the potatoes with a fork to ensure they are full cooked and tender. Allow the potatoes to cool slightly for 5-10 minutes.
Carefully remove the skin from the potatoes, which should peel off easily. Roughly chop the peeled potatoes before adding them to a large mixing bowl.
Add 2 tablespoons unsalted butter and ¼ cup real maple syrup. Mash the potatoes with a masher while gradually adding ¼ cup milk until the potatoes reach your desired texure and creaminess. Add salt to taste.
Drizzle with additional maple syrup if desired and serve warm.
