Prepare 1 (13.25-ounce) prepared chocolate cake mix according to package directions. Bake in a 13 x 9 x 2-inch baking pan. Let the cake completely cool before frosting.
Mint Chocolate Chip Buttercream
In a large bowl, add ¾ cup unsalted butter and 3 cups powdered sugar. Using an electric hand mixer beat together until smooth.
Add 2 tablespoons milk, ½ teaspoon peppermint extract, and 3 drops green food coloring.
Fold in ½ cup semi-sweet chocolate chips then frost the top of the cake.
Mint Chocolate Ganache
In a microwave-safe bowl add 6 tablespoons unsalted butter, and 1 ½ cups semi-sweet chocolate chips.
Microwave in 30-second intervals and stir until smooth. Add in ¼ teaspoon peppermint extract.
Pour the ganache on top of the frosting and use a knife to smooth it out evenly. Slice and enjoy!
