In a large mixing bowl, combine 1 cup old-fashioned rolled oats, ⅓ cup coconut flakes, ½ cup nut butter, ½ cup ground flax seed, ⅓ cup honey, and 1 teaspoon vanilla extract. Mix well to form the dough.
Stir in ½ cup chocolate chips or other desired mix-ins, if using.
Chill the mixture in the fridge for 30 minutes so that the balls will bind together.
Roll into 1 ½ inch balls and store in the refrigerator in an airtight container.
