Combine 2 cups quick oats and 1 cup Rice Krispies cereal in a medium bowl and set aside.
Add 2 tablespoons coconut oil, ¼ cup honey, and ¼ cup packed light brown sugar to a small saucepan and stir to combine. Bring to a boil over medium heat then turn off the heat and add ¼ cup creamy or chunky peanut butter and 1 teaspoons vanilla extract. Mix until smooth.
Pour over the oat mixture and stir until evenly combined. It might not seem like there isn't enough liquid, but keep stirring and it will come together.
Pour it into a greased 8 x 8 x 2-inch pan. Sprinkle 2 tablespoons mini chocolate chips on top and gently press them into the oat mixture.
Allow the bars to cool completely and set for at least 2 hours before cutting them into 10 bars. Wrap individual bars in plastic wrap, or store them in an airtight container for up to 5 days at room temperature.
