Add 3 large eggs, 1 cup cottage cheese, 2 tablespoons vegetable oil, ¼ cup all-purpose flour, and ¼ teaspoon salt to a blender and blend until smooth.
Spray the skillet with pan spray. Add ½ cup of the batter to the center of the skillet. Once small bubbles start to form, about 1.5-2 minutes, flip the pancake to the other side. Let it cook for another minute or so until golden brown.
Roll up the pancake and serve with butter and a sprinkle of powdered sugar, or drizzle with syrup.
