2lbspeachespeeled, cored, and sliced about ¼” thick
1/4cupgranulated sugar

Streusel Topping
¾cupall purpose flour
1cupold fashioned oats
½cuplight brown sugarfirmly packed
½teaspoonbaking soda
½teaspoonsalt
1teaspoonground cinnamon
8tablespoonsunsalted buttercold and cut into 8 pieces
Instructions
Preheat the oven to 375 degrees Fahrenheit and lightly spray the sides and bottom of a 9x9 baking dish. Set aside.
In a large bowl, stir together 2 lbs peaches, 1/4 cup granulated sugar, 1 tablespoon lemon juice, 1 tablespoon all-purpose flour, 1/4 teaspoon ground cinnamon, 1/4 teaspoon salt, and 1 teaspoon vanilla extract. Pour into prepared baking dish.
In another bowl, prepare your crisp topping by whisking together ¾ cup all purpose flour, 1 cup old fashioned oats, ½ cup light brown sugar, ½ teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon ground cinnamon. Use a pastry cutter or a pair of knives to cut 8 tablespoons unsalted butter into the mixture until the mixture begins to clump together. Sprinkle evenly over the peach filling.
Transfer to the oven and bake for 35-40 minutes or until the peaches are bubbling and the crisp topping is golden brown.
Enjoy warm, preferably topped with vanilla ice cream!
