In the bowl of a stand mixer combine the 1 ¼ cups warm water, 1 tablespoon granulated sugar, and 1 packet active dry yeast, stir and cover with a towel, and let it rest for 5 minutes to feed the yeast. It should be bubbly and foamy after about 5 minutes.
Add 2 cups of the 2-2 ¾ cups all-purpose flour and 1 ½ teaspoons salt to the bowl, fit the mixer with the dough hook attachment, and mix on medium-low speed until the dough comes together. Add more flour as needed until the dough pulls away from the bowl.
When the dough has come together increase the mixing speed to medium-high and mix for 3 minutes to develop the gluten.
Rise And Roll Out
Remove the dough from the mixer and add it to a lightly oiled bowl, cover, and let it rest for about 1 hour, or until it has nearly doubled in size.
Grease a 9x13-inch baking dish with half of the 4 tablespoons melted unsalted butter, and set aside.
When the dough has risen, dump it out onto a lightly floured surface and roll the dough into a 9x13-inch rectangle.
Place the dough rectangle into the buttered baking dish and brush the top of the dough with the remaining butter. Cover the dough and let it rise for about 20 minutes, it should rise up about an inch.
Bake and Season
Preheat oven to 450 degrees Fahrenheit and make the seasoning mixture. Whisk together the 3 tablespoons grated parmesan cheese, 2 teaspoons garlic powder, 2 teaspoons onion powder, 2 teaspoons dried oregano, 1 teaspoon dried basil, 1 teaspoon dried marjoram, 1 teaspoon salt, and ½ teaspoon pepper.
When the dough is ready to bake, cut it into 12 equal sticks. Bake the breadsticks for 15-18 minutes until the bread is golden brown and baked through. Remove the breadsticks from the oven.
Brush the breadsticks with the 2 tablespoons melted unsalted butter immediately after coming out of the oven and sprinkle the seasoning mixture evenly across them. Let the bread cool for a few minutes before pulling apart and serving.
