My favorite better than takeout fried recipe made with quinoa! It adds protein and all of the benefits of quinoa and you won’t be able to tell a difference in this better for you dish!
Preheat a large skillet or wok to medium heat. Add 2 tablespoons vegetable oil, 1 small chopped white onion, and 1 cup frozen peas and carrots. Cook until tender, about 3 minutes.
Slide the vegetable mixture to the side then pour 2 large beaten eggs onto the other side. Use a spatula to cook and scramble the eggs. Once cooked, mix the eggs with the vegetables.
Add 3 cups cooked quinoa to the veggie and egg mixture. Pour 2-3 tablespoons soy sauce, and 1 teaspoon sesame oil on top. Stir and fry the quinoa and veggie mixture until heated through and combined.
Add 2 tablespoons chopped green onions, for garnish, if desired.
