In a large pot, cook and crumble ½ pound ground beef and ½ pound ground pork until no longer pink.
Add 1 small diced onion, 1 diced green bell pepper, 2 stalks diced celery, 3 garlic cloves, minced, 1 tablespoon Cajun Seasoning, and salt to taste. Cook until they start to soften.
Add 1 ½ cups long-grain rice and 3 ½ cups beef broth. Bring to a boil and reduce the heat to low. Cover and let simmer for 20 minutes or until rice is tender. Fluff and serve.
