Preheat the griddle to 375 degrees Fahrenheit and spray it with nonstick cooking spray.
Whisk 2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, ½ teaspoon salt, and 3 tablespoons granulated sugar together in a large bowl.
Add 2 lightly beaten large eggs, 3 cups buttermilk, and ¼ cup melted unsalted butter and mix until incorporated, but still slightly lumpy.
Add about ½ cup of batter to the hot griddle. Once the edges start to set and small bubbles form over the top of the pancake, about 2 minutes, flip it to the other side. Cook until golden brown on the bottom, about 2 more minutes.
Repeat with the remaining batter. Serve with maple syrup or buttermilk syrup and fresh fruit. Makes about 9 pancakes.
