Preheat oven to 350 degrees Fahrenheit and spray a 13x9 inch pan with non-stick cooking spray.
Mix the ½ cup softened unsalted butter, ¼ cup granulated sugar, and 1 cup light brown sugar in a stand mixer with the paddle attachment until creamy 2-3 minutes.
Add in ¾ cup creamy peanut butter and mix until incorporated. Scrape down the sides of the bowl. Add in 2 teaspoons vanilla extract and 1 egg and mix to combine.
In a medium bowl combine the 1 ½ cups all-purpose flour, ¾ teaspoon baking soda, and ¼ teaspoon salt.
Slowly add the flour mixture to the butter mixture until just combined. Fold in the 1 ½ cups chocolate chips.
Pour the batter into the prepared pan and bake for 20 minutes or until a toothpick comes out clean.
Place the pan on a wire rack to cool completely. Once completely cooled, cut into squares.
