These slow roasted almonds, cashews, and pecans are coated in a sugar glaze spiced with cinnamon making an addicting snack for any occasion! They also make amazing neighbor gifts!
Preheat oven to 250 degrees Fahrenheit. Lightly spray a baking sheet with cooking spray.
In a medium-sized bowl, add the 1 egg white and 1 teaspoon vanilla extract. Whisk together until frothy. Add the 3 cups mixed nuts and stir until coated.
In a small bowl mix together the ½ cup brown sugar and 2 teaspoons ground cinnamon. Add the sugar to the nuts and toss until coated. Spread the coated nuts evenly on your prepared pan.
Bake for 50-60 minutes, stirring every 15 minutes until golden. Cool and then store in an airtight container.
