Sausage Mushroom Breakfast Bake is a blend of sautéed smoked sausage and fresh vegetables, that is added to a scrambled egg mixture, then baked in less than 30 minutes.
Preheat oven to 350 degrees Fahrenheit and spray a 9 x 13 x 2-inch pan with nonstick cooking spray.
In a medium-sized skillet over medium-high heat, add 2 tablespoons olive oil, 1 small onion diced, and 1 red pepper diced. Cook for 2-3 minutes until almost tender. Add 8 ounces mushrooms sliced and 3 garlic cloves minced and continue to sauté for 2 minutes. Add 2 cups spinach chopped and 7 ounces Eckrich Jalapeño & Cheddar Smoked Sausage Links diced and season with salt and pepper to taste. Cook for 2-3 minutes until heated through.
Spread evenly on the bottom of the prepared pan. Pour 12 beaten eggs on top of the sausage mixture. Bake for 25-30 minutes or until eggs are cooked throughout.
