Spray the inside of the slow cooker with nonstick cooking spray and add 2 pounds boneless skinless chicken breasts.
Add ½ thinly sliced yellow onion and 1 (20-ounce) can drained pineapple tidbits, to the slow cooker.
In a medium-sized bowl, whisk together ¾ cup BBQ sauce, ¼ cup reserved canned pineapple juice, ⅓ cup brown sugar, 1 tablespoon soy sauce, 1 teaspoon garlic powder, and 1 teaspoon salt.
Pour the sauce over the ingredients in the slow cooker. Cover and cook on LOW for 5 hours or HIGH for 3 hours.
Use two forks to shred the cooked chicken. Serve over rice and garnish with green onion, if desired.
