Sprinkle 3 pounds chicken wings with salt and pepper to taste then place them in the bottom of your slow cooker.
In a small mixing bowl, whisk together 1 cup honey, ½ cup soy sauce, 2 teaspoons minced garlic, 1 teaspoon ground ginger, and 2 tablespoons vegetable oil. Pour the sauce over the chicken wings.
Cook on LOW for 6-8 hours or HIGH for 4-5 hours.
When the wings are done, pour the sauce into a saucepan and bring it to a boil. Add 1 tablespoon cornstarch and continue to cook until it thickens. Pour the sauce back into the crockpot and toss the wings to coat.
