Delicious and tender pork cooked in the slow cooker with a honey, lime, soy, garlic, and ginger infused marinade. We loved it so much we had it twice in one week!
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season 2.5 pounds pork loin with 1 teaspoon salt and ½ teaspoon ground black pepper, then add it to the pan. Cook the pork, turning it every 1-2 minutes until every side has been browned. Remove it from the skillet and place the pork into the bottom of a lightly greased slow cooker.
Whisk together ½ cup honey, ¼ cup soy sauce, 1 tablespoon Worcestershire sauce, 2 teaspoons lime juice,2 teaspoons minced garlic, and ½ teaspoon ground ginger, in a small bowl. Pour the sauce over the pork and cover.
Cook on LOW for 6-8 hours, or on HIGH for 4-6 hours, until the pork reaches an internal temperature of 160 degrees Fahrenheit.
Once the pork has finished cooking, remove it from the slow cooker onto a serving plate and cover it with aluminum foil.
Pour the liquid from the slow cooker into a medium saucepan. Whisk in 2 tablespoons cornstarch and cook over medium-high heat for a few minutes, until it thickens into a sauce.
Pour the sauce over the pork. Garnish with chopped cilantro, and lime wedges, if desired, and serve.
