Slow Cooker Thai Peanut Chicken is a creamy, peanut flavor infused chicken that is served over noodles. Easy to make in just a couple steps adding all the ingredients together letting the slow cooker do the work for you! Enjoy the smells that will fill your home while cooking during the day.
Add 1 pound cubed boneless skinless chicken breasts,2 teaspoons minced garlic,⅔ cup peanut butter, 1 cup chicken broth, 1 cup shredded zucchini, ⅓ cup soy sauce, 1 teaspoon sugar, and 1 sliced red pepper into the slow cooker. Stir to combine.
Cook on LOW for 4-5 hours or on HIGH for 2-3 hours. 30 minutes before serving, add 1 tablespoon lime juice and ½ cup chopped cilantro, then cook for the remaining 30 minutes.
Serve over 12 ounces cooked and drained linguine noodles and garnish with chopped peanuts and chopped cilantro.
