Cook 1 ½ cups uncooked orzo according to package directions. Rinse in cold water and place into a large bowl.
Add 1 (15-ounce) can corn,1 (15-ounce) can black beans,1 pint cherry tomatoes, 2 diced avocados, and ¼ cup chopped cilantro. Toss to combine.
Cilantro Lime Ranch
In a food processor or blender, add the¼ cup mayonnaise, ¼ cup Greek yogurt, 3 tablespoons milk, 1 tablespoon lime juice, 2 tablespoons cilantro, 1 clove minced garlic, and ⅛ teaspoon salt and ⅛ teaspoon pepper. Pulse until blended.
Pour the dressing over the orzo salad and toss until coated. Enjoy!
