These 2 INGREDIENT Strawberry Brownies are perfect for strawberry season! Made with cake mix and fresh strawberries, they are dense and chewy with a light strawberry glaze.
Preheat the oven to 350 degrees Fahrenheit. Line a 9 x 9 x 12-inch pan with parchment paper and light spray it with nonstick cooking spray.
Add 1 pound hulled, washed, and chopped strawberries to a blender or food processor and blend until they are completely pureed. Pour the puree through a fine mesh strainer to remove any seeds.
Add 1 (15.25-ounce) vanilla cake mix and ¾ cup of the strawberry puree (discard or save any remaining puree for another recipe or use) to a large bowl and mix with a sturdy spoon or hand mixer. The batter will be very thick, almost like cookie dough.
Spread the batter evenly into the prepared pan. Bake for 23-27 minutes, until it is fully set in the middle with no jiggle.
Remove the brownies from the oven and let them cool completely.
Once the brownies are fully cooled, whisk ⅓ cup powdered sugar and 2 ½ teaspoons milk together in a small bowl and pour evenly over the top of them.
You may serve the brownies right after they have been glazed, or you can chill them for 2-3 hours before serving to get the cleanest cuts.
