Creamy and delicious cheesecake bars swirled with strawberry and baked on top of an oatmeal cookie crust! A delicious dessert bar that the entire family will love!
Preheat the oven to 350 degrees Fahrenheit. Line a 13 x 9 x 2-inch pan with parchment paper and spray with non-stick cooking spray. Set aside.
In a large bowl, combine 1 ⅓ cups all-purpose flour, ½ teaspoon salt, and 1 teaspoon baking powder. Set aside.
Add ½ cup softened unsalted butter and 1 cup light brown sugar to a large bowl. Use an electric hand mixer to cream together the butter and sugar. Add 1 large egg and 1 teaspoon vanilla extract and mix until blended.
Slowly mix in the flour mixture until incorporated. Add in 1 cup steel-cut quick oats until mixed throughout.
Press the cookie mixture into the bottom of the prepared pan. Bake for 10 minutes then remove the pan from the oven. Reduce the oven temperature to 325 degrees Fahrenheit.
Cheesecake Layer
In a large bowl, add 2 (8-ounce) packages cream cheese, ½ cup granulated sugar, 1 large egg, and 1 teaspoon vanilla extract. Mix together until smooth and creamy, about 3 minutes. Spread the cheesecake mixture on top of the warm cookie crust.
Drop ½ cup strawberry jam in large spoonfuls on top of the cheesecake layer. Swirl the strawberry into the cheesecake layer with a knife.
Bake for 25-30 minutes until the cheesecake layer has set up. Remove it from the oven and allow to completely cool.
Chill in the fridge for at least 3 hours before slicing and serving.
