Add ⅓ cup water, ¾ cup granulated sugar, and 1 ¼ teaspoon unflavored gelatin, to a medium saucepan and mix until combined. Let sit for 5 minutes.
After 5 minutes, bring the pan to a boil over medium heat. Once boiling, remove from the heat and whisk in 16 ounces sour cream until no lumps remain. Whisk in 1 ¼ cup heavy cream and 1 tablespoon vanilla extract,.
