In a medium-sized skillet heat the 1 tablespoon olive oil over medium-high heat. season the 4 small chicken breasts, with salt and pepper and add them to the skillet.
Cook the chicken for about 3 minutes on each side until lightly brown and cooked throughout (165 degrees). Remove the chicken and set aside on a plate.
Add the ¼ cup soy sauce, ½ cup brown sugar, ¼ cup crushed pineapple, 2 minced garlic cloves, 1 teaspoon ground ginger, ¼ teaspoon onion powder, ¼ teaspoon pepper, 1 teaspoon sesame seeds, and 2 teaspoons cornstarch to the skillet and whisk. Cook over medium-high heat for about 3-4 minutes until it starts to thicken.
Add the chicken back to the skillet and coat in the sauce. Serve over rice and desired toppings.
