Heat 1 tablespoon olive oil in a large pot over medium heat. Add 1 small diced onion and cook for 3-4 minutes until translucent. Add 2 teaspoons minced garlic and cook for 30 seconds.
Add 2 cups cooked and chopped boneless skinless chicken and ½ cup heavy cream to the pot. Stir to combine.
Add 4 cups chicken broth, 1 (4-ounce) can green chiles, 2 (15-ounce) cans great northern beans, 1 ½ teaspoons ground cumin, 1 teaspoon ground coriander, 1 teaspoon salt, and ½ teaspoon pepper. Stir the soup and bring to a simmer.
Cook for 10 minutes. Remove the pot from the heat and whisk 1 cup sour cream.
Serve warm with toppings of your choice such as cheese, tortilla strips, cilantro, avocado.
