Add more greens into your diet with this refreshing Winter Cobb Salad. This colorful salad is packed with protein and will leave you feeling full and satisfied.
Combine 2 tablespoons orange juice, 2 tablespoons canola oil, 1 tablespoon white wine vinegar, 2 teaspoon honey, ½ teaspoon orange zest, and a pinch of salt in a small bowl or jar. Whisk to combine and set aside.
Salad
Cook 4 slices chopped bacon over medium-high heat in a skillet for about 7 minutes. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Leave 1-2 tablespoons grease in skillet.
Season 2 boneless skinless chicken breasts on both sides with salt and pepper to taste. Returning to the same skillet, cook over medium-high heat for about 5-8 minutes per side or until cooked through. Once cooled, slice the cooked chicken.
To a large serving bowl, add 6 cups chopped Romaine lettuce, 2 quartered hard-boiled eggs, 1 sliced avocado, 1 sliced pear, ½ cup pomegranate arils, and ¼ cup feta cheese. Drizzle the vinaigrette on top, toss, and serve.
