Falafel is a round bite sized mixture of garbanzo beans, seasonings and a hint of spice from a jalapeño all cooked and ready to add to any wrap or salad. A healthy little bite!
In a food processor, combine 1 (15-ounce) can garbanzo beans, 2 cups parsley, 1 cup cilantro, ¼ cup chopped onion, ½ tablespoon garlic, 1 teaspoon cumin, 1 teaspoon salt, ¼ teaspoon pepper, ½ seeded and diced jalapeno, and 1 teaspoon baking soda. Pulse until smooth for about 1 minute.
Add the mixture to a medium-sized bowl and stir in ¼ cup flour. Scoop out about 2 tablespoons and shape into small patties.
Heat a medium skillet to medium high and add the patties. Cook for 2-3 minutes on each side until golden brown and crispy.
