Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
In a large bowl combine 1 ½ cups warm water, 2 tablespoons granulated sugars, and 1 tablespoon instant yeast, Set it aside in a warm place for 5 minutes, until the yeast is frothy.
Add 3 ½ cups all-purpose flour and 1 teaspoon salt to the water mixture. Use a stand mixer fitted with the dough hook to knead everything until smooth, about 5 minutes. Cover the bowl with plastic wrap and set it aside again to rise for 10 minutes. I
Divide the dough into 12 equal portions. Roll each piece of dough into a ball and place them on the prepared baking sheet. Let rest for 10 minutes.
Whisk 1 egg, and 1 tablespoon milk, in a small bowl. Brush it onto the tops of each roll before sprinkling them evenly with 4 ounces shredded Asiago cheese. Bake for 12-15 minutes or until golden brown.
