Sweet Potato Hash is a delicious savory breakfast that will leave you feeling full and satisfied. Everything is made in one pan making the cooking and cleaning easy. Breakfast for dinner never sounded so good!

  • 4 slices bacon diced into 1/2 inch pieces
  • 1 cup onion diced
  • 1 red bell pepper diced
  • 4 cups sweet potatoes diced
  • 2 cups fresh spinach
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • salt & pepper
  • 4 large eggs
  • 1 green onion chopped


  1. Cook bacon in a large skillet (I prefer cast iron) over medium heat until crispy. Remove with a slotted spoon onto a paper towel lined plate.

  2. Cook the onion and pepper in the bacon grease for 2 minutes and then add in the potatoes. Give it a stir so the potatoes get coated in the grease and then sprinkle on the seasonings. Cook another 10-12 minutes until almost tender.
  3. Stir in the cooked bacon and spinach and cook for 1-2 minutes until wilted.
  4. Make 4 wells in the pan and then crack eggs into them. Cover the skillet and cook 2-5 minutes (depending on how you prefer your eggs).
  5. Sprinkle with green onion, salt, and pepper.
