Preheat the oven to 375 degrees Fahrenheit. Wash and scrub the potatoes until clean. Dry with a clean lint-free towel.
Rub each potato with canola oil, about 2 tablespoons for 6 potatoes. Pierce the center of each potato with a knife or fork and place them on a baking sheet.
Bake for 1 hour, or until tender. If you have large potatoes, you may need to add to the cook time.
Remove the potatoes from the oven. Increase the oven temperature to 425 degrees Fahrenheit. Brush each potato with the remaining 2 tablespoons oil and season with salt and pepper.
Bake for 15-20 minutes or until the skins are crispy. Serve with your favorite toppings!
