Add 1 tablespoon olive oil to a wok or large skillet over medium-high heat. Add 1 ½ pounds cubed boneless skinless chicken breasts, and cook until no longer pink, about 5-8 minutes. Remove the chicken and set it aside on a plate.
In a small bowl, combine ½ cup low-sodium soy sauce, ¼ cup brown sugar, 1 tablespoon apple cider vinegar, 1 clove minced garlic, 1 teaspoon sesame oil, and ½ teaspoon freshly grated ginger.
In a small bowl, whisk together ¼ cup water and 1 tablespoon cornstarch to make a slurry. Add the cornstarch mixture to the sauce and whisk to combine.
Pour the teriyaki sauce into the wok over medium-high heat and bring the sauce to a boil. Reduce the heat and whisk until it starts to thicken.
Add the chicken back to the wok or skillet and toss until coated and heated through. Season with salt and pepper to taste. Top with sesame seeds and green onions for garnish, if using. Serve over rice!
