To a medium bowl add the ½ cup drained and rinsed canned black beans, ½ cup thawed frozen corn, ½ cup quartered cherry tomatoes, ¼ cup minced red onion, 2 tablespoons chopped cilantro, ½ teaspoon minced jalapeños, 2 tablespoons fresh squeezed lime juice, and 1 tablespoon extra virgin olive oil. Toss to combine and season with salt and pepper to taste.
If you are making it ahead of time, cover the mixture and refrigerate until you are ready to serve. Add in the 1 diced avocado and toss gently. Serve immediately and enjoy!
