Preheat the oven to 350 degrees Fahrenheit and spray a 3-quart baking dish with pan spray.
Add ½ pound bacon, to a large skillet and cook over medium-high heat until all the bacon is crisp. Use a slotted spoon to remove the bacon from the pan and place it onto a plate or bowl lined with paper towels to drain.
Add ½ pound breakfast sausage to the bacon grease in the skillet and cook on medium-high heat until browned and no pink remains, breaking it into pieces as it cooks. Use a slotted spoon to remove the sausage from the pan and place it on the plate or bowl lined with the bacon. Set aside.
Cut each of the 1 (16-ounce) can biscuits into six pieces and lay them over the bottom of the prepared baking dish.
Add the cooked bacon and sausage evenly over the top of the biscuits.
In a large bowl, whisk 6 large eggs, 1 cup half and half, ½ teaspoon salt, ¼ teaspoon ground pepper, ½ teaspoon garlic powder, ½ teaspoon dried onion flakes, and 1 tablespoon chopped chives, together. Pour over the top of the biscuits and meat.
Sprinkle 1 cup shredded Colby Jack cheese evenly over the top.
Bake for 30-35 minutes, until the biscuits are baked through and the eggs are no longer runny. Let the casserole sit for 5 minutes before garnishing it with additional chopped chives and serving.
