Preheat the grill to medium-high heat and lightly spray the grates with nonstick cooking spray.
Add 1 pound large peeled and deveined shrimp, 14 ounces sliced pork or chicken sausage, 2 ½ cups sliced zucchini, 1 red bell pepper cut into 1-inch pieces, 1 yellow bell pepper cut into 1-inch pieces, ½ teaspoon salt, ¼ teaspoon ground black pepper, 3 tablespoons olive oil, and 3 tablespoons Cajun Seasoning to a large bowl and toss until everything is evenly coated in the seasoning.
Thread the shrimp, sausage, and vegetables equally onto metal skewers.
Grill the skewers on each side for 2-3 minutes until the shrimp is opaque and veggies are tender. Serve immediately.
