In a medium-sized bowl whisk the ¾ cup balsamic vinegar, ¼ cup honey, 3 cloves minced garlic, 2 teaspoons Italian seasoning, and ½ teaspoon salt, and ¼ teaspoon pepper. Reserve ¼ cup of the sauce for later.
Add the 4 boneless skinless chicken breasts to the sauce and marinate for 30 minutes.
In a medium-sized skillet over medium-high heat, add the chicken to the skillet and discard the marinade.
Cook on each side for 3-4 minutes or until chicken is cooked to 165 degrees. Add the reserved ¼ cup of sauce and cook until it thickens.
Top with 4 slices mozzarella cheese and 2 diced avocados, 3 diced Roma tomatoes, ¼ cup fresh chopped basil, and salt and pepper. Drizzle with balsamic vinegar and serve immediately.
