Cheesy Sausage Potato Foil Packets are simple to assemble and packed with sausage, potatoes, veggies and cheese. These are perfect for a camping trip or quick dinner and are sure to be a hit!
Preheat the grill to high heat or the oven to 400 degrees Fahrenheit. Lay out 6 large sheets of aluminum foil and spray them lightly with nonstick cooking spray.
In a large bowl, toss 12 ounces sliced smoked sausage, ¾ pound halved baby red potatoes, ¾ pound trimmed green beans, 2 cups sliced bell peppers, and 2 cups diced onion, with 2 teaspoons dried oregano, 2 teaspoons dried parsley flakes, ½ teaspoon garlic powder, and 1 teaspoon paprika. Season with salt,and ground black pepper, to taste and toss again until everything is evenly coated.
Divide the sausage and vegetable mixture evenly onto the centers of the prepared sheets of foil.
Add 1 tablespoon of the 6 tablespoons cubed unsalted butter to the top of the sausage and vegetable mixture on each foil packet.
Fold the foil over the top of the sausage and vegetables and completely seal the sides of each packet.
Place the foil packets directly on the grill and cook for 25-30 minutes or bake in the oven for 35-40 minutes, until the vegetables are crisp-tender.
Remove the packets from the heat and carefully open them. Sprinkle 2 cups shredded sharp cheddar cheese evenly over all of the packets and serve immediately.
