Prepare the 1 cooked and seasoned chicken breast for the salad by chopping it into bite-sized pieces.
Slice the 2-3 small apples into thin slices, and toss the slices with 1 tablespoon lemon juice.
In a large bowl add the 8 ounces spring lettuce mix, chicken, apples, ⅓ cup roasted pecans, ⅓ cup dried cranberries, and ¼ cup crumbled bleu cheese.
Honey Dijon Vinaigrette
Finely mince the 1 clove garlic and 1 shallot and add them to a bowl.
To the same bowl add the ½ cup olive oil, ¼ cup balsamic vinegar, 1 ½ teaspoons honey, 1 teaspoon Dijon mustard, and salt and pepper to taste, and whisk to mix well.
Pour the dressing over the salad, toss the salad to mix well and enjoy!
