Preheat the oven to 350 degrees Fahrenheit and line a baking sheet pan with parchment paper.
Cream the peanut butter, sugar, vanilla, and egg in a medium bowl using an electric hand mixer.
Stir in the chocolate chips.
Use a cookie scoop to scoop the dough onto the prepared cookie sheet. If desired, press a few extra chocolate chips into the tops of the cookies.
Bake for 6-8 minutes or until lightly browned around the edges.
Remove from the oven and allow the cookies to sit on the cookie sheet for another 2-3 minutes before removing to a cooling rack. Top the cookies with sea salt, if desired.
