In the bowl of a stand mixer, add 1 cup warm water, 2 teaspoons instant yeast, 1 tablespoon sugar, 1 tablespoon olive oil, 1 teaspoon salt2 ½ cups all-purpose flour and half of the 3 tablespoons everything bagel seasoning. Use a dough hook to knead the dough into a smooth ball for about 5 minutes.
Transfer the dough to a greased bowl, cover with a damp cloth or plastic wrap, and set aside until doubled in size, about an hour.
Once risen, punch down the dough and place on a floured surface. Roll the dough out into a large rectangle, ¼ inch thick. Sprinkle on 1 cup Parmesan cheese, then press it firmly into the dough.
Cut the dough into 3 even strips, then stack them on top of each other. Cut into 6 sections so you end up with 6 stacks of 3 layers, 18 layers total. Place them in a greased 8.5 x 4.5-inch loaf pan and sprinkle the tops with the remaining half of the 3 tablespoons everything bagel seasoning.
Preheat the oven to 350 degrees Fahrenheit and let it rise for 30 minutes, or until doubled in size. Bake for 30-35 minutes, until golden brown.

Leftover and Make Ahead Instructions
Room Temperature- Store leftovers in an airtight container at room temperature for 2 days. To reheat, warm in the oven at 300 degrees for 3-5 minutes.
Freezer- Wrap bread tightly in plastic wrap, then place in a Ziploc bag and store for up to 3 months.
Make Ahead- To make ahead, assemble the loaf up to the second rise, cover, and refrigerate overnight.
