A gooey scrumptious mash up of s'mores in a cookie, you are going to love this! The melty chocolate, sticky marshmallow and graham cracker flavor combination you love, transformed into a delectable easy to eat cookie.
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and spray lightly with non-stick cooking spray.
In a medium-sized mixing bowl, whisk together ½ cup softened butter, ½ cup granulated sugar, and ¼ cup brown sugar until it is light and fluffy 2-3 minutes. Add in the 1 egg and 1 teaspoon vanilla and mix until incorporated.
In a separate bowl, add the 1 ⅓ cups all-purpose flour, ¾ cup graham cracker crumbs, 1 teaspoon baking powder, and ½ teaspoon salt and whisk together. Slowly add the flour mixture to the butter mixture and mix on low until it is combined.
Fold in the 1 cup chocolate chips and 1 cup mini marshmallows . Scoop a heaping tablespoon of dough onto the cookie sheet.
Bake the cookies for 10-12 minutes. Let the cookies cool on the baking sheet for 5 minutes before moving them to a cooling rack.
