Add the popcorn to a large bowl and set aside. Roughly chop the fudge mint cookies into pieces.
In a microwave-safe bowl, heat the milk chocolate in the microwave in 30-second increments, stirring between each increment until the chocolate is fully melted and smooth.
Pour the chocolate over the popcorn and add the chopped cookies and baking chips.. Stir with a rubber spatula until the popcorn is evenly coated.
Pour the popcorn onto a large sheet of parchment paper or a large silicone mat to set.
If you would like to add a green chocolate drizzle, melt the green candy melts in a microwave-safe bowl in 30-second increments until it is fully melted, stirring between each increment. at a time until it is melted and smooth. Drizzle it over the popcorn with a spoon or pour the melted chocolate into a ziplock bag and snip the corner before drizzling it over the popcorn.
Allow the popcorn to cool until the chocolate has hardened. Break it into pieces before serving.
