Hawaiian Macaroni Salad is the perfect side dish! It is a delicious macaroni pasta salad with ham, pineapple, shredded carrots, and green onions, and a tangy dressing.
1(20-ounce)can drained pineapple chunks(reserve ½ cup liquid for dressing)
2cupscooked and cubed ham
½cupshredded carrot
¼cupgreen onion
Pineapple Dressing
½cuppineapple juicereserved
1 ½cupslight mayonnaise
½cupgreek yogurt
1tablespoonapple cider vinegar
1tablespoongranulated sugar
salt and pepper to taste
Instructions
Boil ½ pound dry elbow macaroni according to package instructions. Drain and rinse the cooked pasta in cold water then set aside.
In a large bowl, combine the cooked macaroni, 1 (20-ounce) can drained pineapple chunks, 2 cups cooked and cubed ham, ½ cup shredded carrot, and ¼ cup green onion.
In a small bowl, whisk together ½ cup pineapple juice, 1 ½ cups light mayonnaise, ½ cup greek yogurt, 1 tablespoon apple cider vinegar, and 1 tablespoon granulated sugar.
Pour the dressing over the macaroni salad and stir to coat evenly. Season with salt and pepper to taste and enjoy!
