Heat 2 tablespoons olive oil in a 12-inch skillet over medium heat. Season 4 thinly sliced boneless skinless chicken breasts, with salt, and ground black pepper,r then add them to the pan.
Cook the chicken on each side for about 4 minutes, until it is no longer pink and reaches an internal temperature of 165 degrees Fahrenheit. Remove from the pan and set aside on a plate.
Add ¼ cup honey, 2-3 tablespoons stone ground dijon mustard, and 2 teaspoons minced garlic to the pan and whisk to combine. Cook over medium heat for a few minutes until it thickens.
Add the chicken back to the pan and coat it in the sauce on both sides. Top each chicken breast with a slice of4 slices good quality ham and 4 slices Swiss cheese. Continue to simmer over medium-low heat until the cheese has melted on the top, then serve immediately.
