In a small saucepan over medium high heat, combine 1 cup orange juice, ½ cup apple cider vinegar, ½ cup packed light brown sugar, ¼ cup honey, 2 tablespoons chili powder, 1 tablespoon ground coriander, and 1 tablespoon ground cumin. Bring to a boil, reduce heat to medium and let cook for 35-45 minutes or until sauce has reduced to one cup.
In a medium sized skillet over medium high heat, add 1 tablespoon olive oil and 2 pounds boneless skinless chicken thighs. Season chicken with salt and pepper and cook for 3-4 minutes on each side or until 165 degrees Fahrenheit in center and no longer pink. Drizzle the glaze on top and allow to simmer for 1-2 minutes making sure the chicken is coated well in the glaze. Serve immediately.
