This lasagna soup takes all of the classic lasagna flavors and transforms them into a hearty, delicious soup. Its combination of noodles, ground beef, marinara sauce, and cheese is so satisfying and easy to prepare.
8ounceslasagna noodlesbroken into pieces (about 10 noodles)
1tablespoonextra-virgin olive oilplus more for drizzling
1onionchopped
1poundground beefor sausage
3clovesgarlicchopped
1teaspoondried oregano
2tablespoonstomato paste
4cupslow-sodium chicken broth
(1)15 ounce cancrushed tomatoes
1/2cupchopped fresh basilplus thinly sliced leaves for topping
1/3cupgrated parmesan cheeseplus more for sprinkling, optional
1/4cupheavy cream or half-and-half
Ricotta cheesefor garnish
Instructions
Cook the pasta according to the package directions. Drain and drizzle with a little bit of olive oil.
Add one tablespoon of olive oil to a large pot and heat over medium-high heat. Add the onion to cook until it starts to soften. Add the ground beef, garlic, and oregano to the pot and cook until the meat is brown and cooked throughout. Add the tomato paste, continue stirring, and cook for about 2 minutes.
Add the chicken broth, tomatoes, and 1 cup of water; cover and bring to a simmer. Uncover and cook until slightly reduced, about 10 minutes. Stir in the noodles, basil, parmesan, and heavy cream. Simmer for two more minutes.
Serve in bowls and garnish with chopped basil, ricotta cheese, and parmesan if desired.
