Combine 2 ½ cups Graham cracker crumbs and ½ cup melted unsalted butter in a bowl and mix until it resembles wet sand. Pour the crust mixture into an 8" or 9" springform pan. Press firmly into the bottom of the pan and about 1" up the sides.
In a large bowl, or stand mixer, add 3 (8-ounce) packages softened cream cheese. Using an electric hand mixer or the paddle attachment, beat the cream cheese until smooth.
Add 1 ½ cups powdered sugar, ⅓ cup key lime or lime juice, 1 tablespoon key lime or lime zest, and 1 teaspoon vanilla extract. Mix until creamy and incorporated.
Add 1 ¼ cup heavy whipping cream and beat on low until incorporated. Increase the speed to high and mix until thickened and fluffy. Don't stop until you have stiff peaks!
Spread the cheesecake mixture into the prepared pan. Cover and refrigerate for at least 5-6 hours or until firm. Slice and serve with sweetened whipped cream as desired.
