Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray.
Season 4 boneless skinless chicken breasts with salt and pepper on both sides and set aside.
In a shallow dish add 4 tablespoons unsalted melted butter. In another shallow dish add ½ cup Italian bread crumbs, ½ cup grated parmesan cheese, and ½ teaspoon garlic powder.
Dip each chicken piece into the melted butter and then coat in the parmesan garlic crumbs. Lay the coated chicken in the prepared baking dish.
In a medium-sized bowl add 1 medium sliced zucchini, 1 medium sliced yellow squash, and½ pound quartered baby red potatoes. Toss the vegetables in 2 tablespoons olive oil then add the vegetables to the baking dish.
Bake for 30-40 minutes until chicken is cooked throughout and vegetables are tender.
