Ingredients
1tablespoonolive oil
1poundcubed boneless skinless chicken breasts 1 inch cubes
salt and pepper
2tablespoonsunsalted butter
2tablespoonsall-purpose flour
2½cupschicken broth
20ouncesrefrigerated tortellini
½cupheavy cream
¼cupgrated parmesan cheese
1½cupsfresh spinach
1cuphalved cherry tomatoes
chopped parsley for garnish
Instructions
Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add 1 pound cubed boneless skinless chicken breasts to the pan and season with salt and pepper. Cook 4-5 minutes, stirring occasionally, until chicken is browned and just cooked through. Remove the chicken from the pan and set aside on a plate.
Add 2 tablespoons unsalted butter to the pan and melt; whisk in 2 tablespoons all-purpose flour and cook for 1 minute. Stir in 2½ cups chicken broth and cook for 2 minutes until slightly thickened.
Add 20 ounces refrigerated tortellini to the pan and bring to a boil; cook for 4 minutes, stirring occasionally to make sure tortellini is coated with liquid. Stir in ½ cup heavy cream and ¼ cup grated parmesan cheese and cook for 1 more minute.
Add the chicken back to the pan along with 1½ cups fresh spinach. Cook for 2-3 minutes, or until spinach is wilted. Fold in 1 cup halved cherry tomatoes. Sprinkle chopped parsley for garnish over the top and serve.
