Season 3-4 bone-in pork chops with salt and pepperIn a small bowl, combine the 1 tablespoons brown sugar, 1 teaspoon chili powder, ½ teaspoon paprika, 1 teaspoon Italian seasoning, and 1 teaspoon garlic powder. Rub on all sides of the pork chops.
In a large skillet, add 6 slices chopped bacon and cook until no longer pink. Remove from the pan with a slotted spoon and set aside on a plate.
Add the pork chops to the skillet and cook until no longer pink and the internal temperature reaches 145 degrees Fahrenheit. Remove the pork chops and set aside on a plate.
Add 1 ½ cups chicken broth, 1 tablespoon Dijon mustard, 2 tablespoons cider vinegar, 2 tablespoons honey, 1 tablespoon fresh thyme minced and 1 tablespoon fresh rosemary minced. Whisk until it starts to simmer and reduce the heat, and add 1 sliced apple. Let the sauce deglaze and simmer the apples until they start to soften.
Add in the pork chops and bacon and allow to heat through.
