To prepare the bread crumbs, cut 1 loaf French bread into 1-inch pieces and stale them overnight. You can also toast them in the oven at 350 degrees for 10-12 minutes until they are lightly golden.
In a medium-sized skillet, cook and crumble the 1 pound ground Italian sausage until no longer pink. Prepare the slow cooker by spraying it with nonstick cooking spray.
In a large bowl, toss the bread crumbs, sausage, 1 large chopped onion, 3 medium chopped carrots, 2 ribs sliced celery, 1 tablespoon basil leaves, 2 teaspoons rubbed sage, 1 teaspoon thyme leaves, ½ teaspoon salt, ¼ teaspoon pepper, and 8 tablespoons cubed butter, until combined.
Dump everything into the slow cooker and pour the 2 cups chicken broth on top. Cook on LOW for 3-4 hours until the vegetables are tender.
Garnish with fresh chopped parsley and dried cranberries if desired.
