Pop ½ cup uncooked popcorn kernels with an air popper machine into a large bowl. Set aside.
Add 1 cup light brown sugar, ¼ cup unsalted butter, and ½ cup light corn syrup to a medium saucepan and heat over medium-high heat. Bring to a boil, then add ½ cup sweetened condensed milk and ½ teaspoon sea salt.
Allow the caramel to gently boil for about 3-4 minutes until it gets to the softball stage, or 235-240 degrees Fahrenheit on a candy thermometer. You can also test this by dropping a small amount of caramel in small bowl of cold water. At the softball stage it should form a soft, pliable ball that is easily squished between your fingers. Be careful not to let the caramel burn while bringing it to this stage.
Once it reaches the softball stage, carefully pour the caramel over the popped popcorn. Mix with a wooden spoon until all of the popcorn is evenly coated. Let it cool completely before serving.
